On the "cone" that the motor is inserted into, there should be a small plastic plug on the top. If you pull this plug out you can undo the set screws on the coupler between the color and the leadscrew

Might want to look at the cheap Chinese "cnc routers" I'm not sure they are really strong enough to do much more than PCB engraving, but should be totally fine for that. Welcome! Depending on the controller you have, you may find it worthwhile to just buy the denford software, as it is quite good. If your controller is too old, you may be out of luck for that to be a reasonable option. If that is the case, you would likely want to strip out the old controller anyway...
